If there's one spice every Southerner knows by name, it's Tay Ninh shrimp salt. It's no coincidence that this salt has been associated with the name Tay Ninh province for decades – it's a handmade product from ground dried shrimp, mixed with coarse salt, fresh chili, and kumquat according to a traditional recipe that each producer keeps to themselves.

The natural vibrant orange-red color of the shrimp salt comes from the shrimp and chili, not artificial coloring. The familiar aroma of dried shrimp intertwined with the light sourness of kumquat is something that any Southerner who smells it will instantly recall childhood afternoons spent eating fruit by the roadside with friends.

Tay Ninh shrimp salt is made from premium dried land shrimp, coarsely ground just enough to still feel the texture of the shrimp in each grain of salt – not finely ground like powder, to preserve the natural sweetness of the shrimp. The overall flavor is a perfect balance of salty, spicy, sour, and sweet – four flavors in one small grain of salt.

Fruit dip: Use directly to dip green mangoes, guavas, plums, tamarinds, watermelons, pineapples - any fruit that is sour or refreshing is suitable. This is the classic and best way to use Tay Ninh shrimp salt.

Marinating grilled meat: Mix 1-2 teaspoons of shrimp salt with pork, chicken, or shrimp 30 minutes before grilling - shrimp salt completely replaces the usual marinade, creating a beautiful red color and distinctive aroma when grilled.

Salad dressing: Use instead of salt in mango salad, papaya salad, banana blossom salad, for a rich flavor and aroma that regular salt cannot provide.

Sprinkle on snacks: Popcorn, French fries, grilled rice paper, mixed kumquat dip for rice paper, etc.

Store in a cool, dry place, away from direct sunlight and high humidity. Seal the zip-lock bag tightly after each use - shrimp salt easily absorbs moisture and clumps if left exposed to the air.

Refrigeration is not necessary if used within the expiry period. If you want to maintain the vibrant red color and aroma for longer, you can store it in the refrigerator – it will remain good for 9-12 months while maintaining quality. Avoid placing near a stovetop or in areas with steam, as heat and humidity will cause the shrimp salt to spoil quickly.
